Equipment

Ingredients
  

  • 4 bone-in skin-on chicken thighs
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tbsp fresh lemon juice
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper (optional for heat)
  • 1 tbsp fresh chopped parsley (for garnish)
  • Lemon wedges for serving

Instructions
 

Prepare the Marinade

  • In a bowl, mix olive oil, soy sauce, lemon juice, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using).

Marinate the Chicken

  • Place the chicken thighs in a large bowl or ziplock bag. Pour the marinade over them and massage it into the meat.
  • Cover and refrigerate for at least 30 minutes (or up to 12 hours for deeper flavor).

Preheat the Grill

  • Heat your grill to medium-high heat (375-400°F). Lightly oil the grates to prevent sticking.

Grill the Chicken

  • Place the chicken skin-side down on the grill. Cook for 5-7 minutes until the skin is crispy and golden brown.
  • Flip and cook for another 5-7 minutes until the internal temperature reaches 175°F (80°C).

Rest and Serve

  • Remove from the grill and let the chicken rest for 5 minutes to retain juiciness.
  • Garnish with fresh parsley and serve with lemon wedges.

Notes

  • For extra smoky flavor, use charcoal instead of a gas grill.
  • No grill ? You can also use a cast-iron pan or an air fryer at 400°F for 20 minutes (flipping halfway).
  • Best served with grilled vegetables, mashed potatoes, or a fresh salad.
